The original recipe is from Delia Smith's Cookery Course book and is a family favourite. However, it uses 3oz (75g) of butter. This is a my low-fat version and made with brown rice rather than white.
I have used 4 pcs. (4 oz) each of Tilapia. However, that is a pretty healthy serving. You can use 1 pc., cut it in half and follow the same directions.
I got this recipe while attending a spa cuisine class at Johnson and Wales. It is really great. This could also be done with haddock, halibut, or even salmon.

This came from Cooking Light magazine, but I left out some ingredients and changed others a little. I didn't care too much for all that garlic, so unless you really like garlic, you might want to go easy...
This recipe is very quick to make, tastes great and goes really well with sides of broccoli and brown rice. This is usually a staple in my weekly meal plan.
